Lesser Celendine

Lesser Celendine
Suddenly, in the early spring, the woods are graced with a carpet of tiny yellow flowers. They are so pretty, but ooooh - they are 'invasive' we are told by the native plant police. Like Robbie the Robot, we are encouraged to exteminate, exterminate.

Seriously? Are we really so clueless as to ignore this source of free, delicious food?

I have been collecting the leaves and flowers and steaming them like spinach. Not all the experts would endorse this - for one thing there appears to be toxin in the plant, but it is neutralized by heat.

For a complete description of this plant and it's many uses, including recipes, visit eatweeds.co.uk.
